CHRISTMAS SPECIAL AT RESORTS WORLD MANILA'S IMPRESSIONS

 Something special is in store for people that would walk the halls of Resorts World Manila this Christmas Season. On December 23-25, guests would be treated to an amazing meal in Impressions.
 Impressions is known as the baby of The French Master Chef Cyrille Soenen. Rightfully so as it delivers delicious and special dishes to its patrons.
 For the Holiday season, Chef Cyrille and his team created a set that screams how special this season is. To get things started,  an Amuse Bouche of Smoked Salmon Roulade with Ricotta cheese  was placed on our tables. There's actually Squid Ink Tuile on top just to give it texture. The cheese went extremely well with the salmon.
 Engulfed with bacon, this Pork Terrine with Cherry compote makes me want to get more bread. Having a slice on top of a piece of toasts gives the sweetness and the saltiness great balance.
 For something warm, the Spiced Pumpkin Soup with Fennel, Sage Craker, and Foie Gras Mousse made everything perfect. If I could have, I would have had another round of this. The foie gras mousse made it decadent and partnered really well with the pumpkin flavor.
For the main course, the Braised Beef Brisket and Mushroom Gratin was served.
 A colorful sight, you could see all the colors of the holiday season in this dish. The beef is tender and the gratin compliments it pretty well.
 Dessert was a great interpretation of Raspberry Panna Cotta with Red Crumble. Here, there is a spiced ganache and white vodka ice cream. Everything just comes together.
Known as a place to have a great meal, Impressions in Resorts World Manila makes you want to visit. This Christmas Special is available for dinner on Deember 23-25. Also, for lunch and dinner on Christmas Eve.

RESORTS WORLD MANILA: I LOVE DISH!

 Don't you love it when you're able to have fun and enjoy but still help another person? At Resorts World Manila, different favorite celebrities come together to create dishes that would entice guests and help different beneficiaries.
 Just a week ago, Resorts World Manila introduced the I LOVE DISH. A campaign that brought together different celebrities and the amazing Chef Cyrille Soenen to create dishes that would be delicious and in the same way help charitable institutions.
 To start, Chef Luigi Mulach created the SINUGLAW SA ALIGUE. Almost similar to ceviche, Chef Luigi's version is his take on the classic Filipino pulutan. Cooked with vinegar, coconut milk, and crab fat, this must not be missed. You could get this at THE TERRACE at Maxims Hotel and in Bar 360 at RWM Gaming Area.
 Something different, Stephanie Zubiri created the Sambal-Spiced Mixed Mushroom Farfalle. Think pasta with a creamy mushroom background. It's actually not that spicy and fits the bill as it could be ordered at Impressions.
 Meg Imperial's Paremesan Crusted Chicken Breast is a quick yet filling meal. The meat was coated pretty well that it gives a bit of a crunchy texture. This one could be availed at Cafe Maxims.
 The Donita Rose created not one but two dishes. Aside from the Creamy Mango Strawberry Jelly, she also made a juicy chicken treat for everyone. The Ginataang Chicken Adobo was pampered with a creamy coconut marinate. You could try this out at Silogue, GF Gaming Area.
Dimples Romana went for the SALTED EGG PRAWNS. Other establishments might have this dish but could be a bit dry. On the contrary, this version is perfectly seasoned and filled with the salted egg sauce. This is available at PASSION.
Dessert was incredible. Personally, I didn't think that they could do a lot with sweet endings yet SAM OH went above and beyond. She elevated the HO TTEOK. A Korean pancake dish that's served with a sweet nutty filling and partnered with a house-made black sesame seed salted caramel ice cream. Available at Ginzadon, you should definitely try this out. For someone that might be in a hurry or just in Resorts World for a quick snack, Mark Bautista's PEANUT BUTTER CUPCAKES are a must. Believe it or not, I didn't think highly of it. BUT, one bite and I should have not judged the book by its cover. It has a creamy center and the cupcakes are moist. Delicious and deadly, this is available at Cafe Maxims.
Here is Chef Cyrille "Cicou" Soenen together with some of the celebrities. I can't wait to return and enjoy the different dishes that Resorts World Manila offer. To think, when you order these dishes, you're able to help the COR foundation, Pasay City Social and Welfare Development, and the Right Start Foundation. Amazing.

IMPRESSIONS: The Perfect Date Place for Valentine's

There's a sense of excitement each time my foots step into IMPRESSIONS. Fine dining with the perfect service, it is here that privacy and comfort are well provided for.
With CHEF CYRILLE SOENEN at the helm, one can't really go wrong with any of the dishes you might pick. Having the distinction of being the only resident Maitres de Cuisiniers de France (Mater Chef of Franch) in the Philippines, Chef Cyrille knows his way around the kitchen. Needless to say, I was in for one heck of an Sunday Brunch just in time for Valentine's
Since opportunity and exclusivity are important to guests, IMPRESSIONS makes it a must to offer something delicious and different. Not yet out in the market, RAFFA SPARKLING is a delicious sparkling drink. With the option to choose between dry and semi-dry, patrons could definitely enjoy the feast that would come their way.
Since this is the Sunday Brunch just before Valentine's day, the restaurant made it more enticing with the addition of different french inspired dishes and eastern flavors. Since Impressions is known for their cuts of meat, I was pleasantly surprised that they offered some sushi, sashimis and even siomai but with French Cuisine Twists.
Aside from those mentioned, other appetizers were presented. From different types of bread, ham and cheese, one could also go for dips and a meat or vegetable tartare as well.
Smoked meats and seafood were a hit. Adding more flavor to any of the dishes.
A seafood feast was also presented with options to have each one fresh, baked, steamed, and roasted.
From scallops, oysters, mussels, local lobsters and huge shrimps, one can't get enough of the different dishes. Furthermore, salads and other small plates were present to entice the dinners to eat more.
Moving over the main events, IMPRESSIONS has made a mark as a FRENCH RESTAURANT with fine meat dishes. In this buffet spread, the live cooking station had tons of surprises for meat lovers.
To start things first, there was an incredible mushroom risotto that was to die for. Each grain left a silky smooth texture that is magnificently done. The mushroom flavors erupted with each spoonful.
But the attention must be given to the MAINS. One meat is stuffed with sisig to give it a Filipino flavor. Another is covered with herbs. The dishes here aren't cooked prior to any order. They are done once you ask for them. That is how serious IMPRESSIONS are to give the best dishes to their guests. No shortcuts and definitely no expense is spared.
More than anything else, it was the steak that is a must get. Asking for a medium rare, they executed it perfectly. This is one of the few restaurants in the metro that could deliver such quality. Usually, steaks at buffets would be either overcooked or under. Here, they were not having any of that.
It should be noted that a meal is not a meal without a proper start. For me it was a few appetizing finger foods that pushed me into the fray. After trying different Hors d'oeuvre, I went for the lobster bisque. One of the common mistakes for this would be the saltiness factor. Usually, restaurants would go over. At IMPRESSIONS, they were having none of that.
Here, the sushi are made to order. Aside from the usual, the most impressive one would be the unagi or eel, the steak, and the foie gras. The cuts of salmon and tuna was incredibly sweet as well.
Something different, they also had tempura. Red versions were a hit with the kids as the batter was mixed with beet. It was something different.
High ticket dishes such as the FOIE GRAS is always a must at IMPRESSIONS. There is a right way of doing things and here, they nailed it. Each bite is buttery and perfect with the balsamic glaze.
As I mentioned the seafood bar also gave fresh delicacies like these oysters from down south. The flavors all popped out. It was an experience.
Dessert was well curated as well. From crepes, to souffles and delicious not your ordinary cakes, you won't go wrong with any. The fruits were also in season. It was delicious to say the least when you have this huge strawberries from the states and dip each one into a liquid chocolate concoction.
IMPRESSIONS in RESORTS WORLD MANILA is a fine example of quality over quantity. Each dish is well curated and most if not all are made to order. The freshness and the work ethic placed into each plate goes to show why IMPRESSIONS is one of the best French Restaurant in Metro Manila.

IMPRESSIONS: BEEF and WINE Night by Chef Cyrille Soenen


On one fine night in Resorts World Manila, IMPRESSIONS presented an amazing buffet that screams incredible flavors and delicious dishes. Headed by Chef Cyrille Soenen, the BEEF and WINE NIGHT welcomed discerning guests and hungry appetites.
Located on the third floor of the Maxims Hotel in Resorts World Manila, IMPRESSIONS is the perfect date place for you and your love ones. Elegant decor and a long wine wall surrounds the restaurant. 


I could see myself bringing or even proposing to a special someone in this particular establishment. That is the vibe that IMPRESSIONS gives off. Sincere, elegant and private.

THIS particular night's theme was the "BEEF and WINE night". IMPRESSIONS offers to serve you dishes that will make your food fantasy come true.
Unlimited refills of both white and red and even a buffet spread of even greater quality.

Different meats, cheese and a create your own salad serves as the first station of the buffet. The prosciutto and the cheese makes a nice starting plate because you could partner them with a red or a white wine.

Personally, I do away with the usual combination of red to dark meat and white to chicken and fish. I would go for whatever my taste buds desire. More often than not, my choice would be white because of the sweetness and the fruity touch.

A number of bread selections with different butter and spreads were next on the table. When in a buffet, I usually skip the carbs as one can easily get full from it.

Cold dishes lined up the counter. From a Smoked Beef Bacon Salad to Thai Beef Salad and a mixture of Filipino Beef Marrow Stew served in a soup like dish.

A must try though would be the BEEF CARPACCIO. This was infused with strawberry that made the dish work. The strawberry went well with the beef that gave it a different taste dimension.

For something heavy, the guests could choose from gratinated Beef Meat Balls with Sauce Mornay or even a Beef Ravioli with 3 sauces (Pomodoro, Beef Jus, Cheese) and a home made beef sausage. I enjoyed the different dishes as they didn't overpower one another. They worked well with one another.
For something to warm up the appetite, SHREDDED BEEF with vegetables served with hot beef consomme would be your pick.



The beefyness of the consomme did a number on my taste buds. It wasn't like your ordinary soup. Rather, it gave mouth reasons to jump for joy because of the savory and umami flavor it gave out.

The highlight of this buffet would have to be the carving station. Different cuts of meat were served and cooked based on your preference. A selection of side dishes like fries and backed potatoes would accompany your choice.


You could choose between Glazed Beef Short Ribs, Top Blade and the Beef Wellington.
In my honest opinion, the BEEF wellington was my top pick among the selection.
Basically a fillet of steak that is coated with different pate and duxelles or mushrooms and cooked with puff pastry. The layering of the flavors and the elements were in perfect harmony. Everything was distinct and delicious.

Since this was a special night CHEF CYRILLE brought out a couple of off the buffet menu dishes.


The first being this home made bacon. Not overly salty and has the perfect ratio of fat to meat, this is delicious. Partnered with wine and the potatoes, it goes without saying that any bacon lover would enjoy this.

Another surprise was the prime rib. The chef is particularly known for this and I am quite delighted with the quality and the flavor he was able to extract from this cut of meat.

Cooked medium rare, I believe this is the optimum level that one could enjoy this dish. He delivered it perfectly.

Seared underneath and on the side, this is a must order when one visit IMPRESSIONS.
For dessert, a number of different sweets were brought out.

From a mango meringue to a home made marshmallow and even a white chocolate molded and designed into a pistachio nut like form.
I would be the first to say that this type of buffet is not for everyone. Given that the quantity pales in comparison with other buffet restaurant, IMPRESSIONS lures you in because of the quality, flavor, service, and attention to detail. You go here because you want the good stuff and not just any useless calories that won't make you swoon with delight. A steak is cooked medium when asked and not medium well. They know the difference and the proper cooking techniques to produce amazing dishes. Having won 4 consecutive Philippine Best Restaurants Awards is just tip of the iceberg for Chef Cyrille and Impressions. Can't wait for what he has in store next.
