FLAVORS OF EASTERN VISAYAS: A GATHERING OF DIFFERENT FILIPINO DELICACIES

It was a night to remember. Right in the middle of town, a plaza was transformed into an event’s place to showcase the extraordinary products of Eastern Visayas. An invitation for tourists both foreign and local to visit and enjoy the bounty of the land.
Here, a presentation of different food items led to a gathering of purveyors and local artists in the industry. Giving an emphasis to BAYBAY CITY and ORMOC CITY, each saw it fit to promote their crafts and specialties.
Graced by the presence of different government officials from BAYBAY CITY, ORMOC CITY, and the Department of Tourism, the event was an off shoot of the recently concluded MADRID FUSHION MANILA . Each one contributed and collaborated to introduce and promote the different products of the area.
To start things off, LEYTE  as a whole sent on over DRIED PUSIT or SQUID. A perfect starter, these crunchy small bites are. Some are sweetened while others goes well with vinegar on the side.

Just beside it, MORON was also served. Somewhat close to suman, these are sticky rice pudding wrapped in banana leaves. Others would also enjoy the BINAGOL. Made with taro or gabi, it is mixed with some glutinous rice and served with a special peanut sauce. Remember to flip it upside down to get the sauce on top.
According to ESTRELLA PANGILINAN of the Ormoc Festival and Cultural Foundation, Ormocanon dishes are a fusion of flavors from all over the country. It is a mix of Hispanic and American influences that produces a rich and flavorful taste.
  Right off the bat, NATIVE PORK LECHON was brought out. The pigs used are very special to Leyte. They are black, thick skinned, and have long snouts. Surprisingly, the lechon isn’t as oily as you would experience with other roasted pigs from the country. Their version can stand on its own in room temperature without it’s fat coagulating. According to Jet Serafica, the person behind this amazing dish, you won’t need soap to wash your hands after eating this healthier lechon version.
  When asked, Department of Tourism’s very own BING LUMBRE mentioned that food from Eastern Visayas has an affinity towards coconut. Differentiating itself from Bicol, as theirs is not as spicy. Rather, it is rich, sweet, and savory. A few dishes were presented that could seem similar but quite unique. HINATUKAN NGA MANOK or Chicken boiled in coconut milk  alongside LAWOT LAWOT or mixed vegatables and their very own LUMO or stewed carabao meat in coconut milk were all present in the event.
Another specialty, would be the HUMBA. Pork belly is cooked in soy sauce, vinegar and brown sugar. One would think that it is similar to adobo yet, it isn’t. Their version is also mixed with salted black beans, fried peanuts salt and even uses ORMOC’S very own pineapples. BAY LEAF CATERING gave it a little twist by using a brand of softdrink just to sweeten it up.
Speaking of, ORMOC’S PINEAPPLES were also the star of the show. Known for their incredible sweetness, the core is also so soft that you could eat it. Since there is an abundance of pineapples, they are also made into pies that everyone would love and enjoy.
 
  Surprisingly, local establishments have caught up with the salted egg craze as well. One even delivers these very addicting snacks. Others from the ORMOC LOCAL PRODUCERS ASSOCIATION presented takes on sweet endings like cakes, ice creams, and even tarts. Special mention has to go with DINDO’S ICE CREAM. As a local fruit vendor, he uses the fruits he sells to create a delicious and healthy ice cream blend.
  Aside from the gathering of these amazing dishes, BAYBAY CITY made sure that they were properly represented as well. Known for having different root crops, they have these amazing CASSAVA CHIPS right there for the taking.
EARLIER in the day, BAYBAY CITY prepared a scrumptious feast to compliment its focus on cassava. Here, we were introduced to CASSAVA or locally known as KABKAB.
Traditionally, these were flattened out to a big flat sheet. It is partnered with their very own mix of blackstrap molasses. Usually, you would see this to be on the light brown transparent side but the sugar that they create it from makes it quite different and distinctively BAYBAY.
Different restaurants and establishments made use of the KABKAB and turned it into something more up to date. We could find it partnered with different dips and sauces. D’KORETOR ASIAN RESTO made it into tuna, chicken, or vegie taco form. Ciudad partnered it with French Onion Dip. For a more local flavor, PEDRO’S CAFÉ had it as “BINAYBAYON TACO”, a fun mix of different vegetables and spices to put on top of the KABKAB. As such, we could conclude that the KABKAB is very versatile that it could work with anything you partner it with.
One of the most famous dishes in BAYBAY CITY though would be their very own grilled chicken. A concoction of different herbs and spices makes the flavor of this grilled dish. They are very proud of this and as a visitor you should try it out as well.
Another surprise would be their version of the HALO HALO. It is only here that one could see the HALO HALO created with different fruits and vegetables.
The night ended with different song, dance, and fire exhibition numbers from the locals.  It was a festive experience.
EASTERN VISAYAS is a place that would definitely be on the map when it comes to food. For a Manila guy like me, I didn’t expect that the dishes they serve were quite delicious. It’s something that you rarely see in the metro. More than just food, wait for my future posts where I feature different activities in Ormoc and Baybay.

5 Things to do in LIO, EL NIDO in PALAWAN.

Summer is definitely not yet over. Even if we experience colder summer nights in Manila, a trip to the beach would definitely make your vacation one heck of an experience. Voted as one of the best islands in the world, PALAWAN just might be your next summer bet. Here, you get to see nature as it is. Untouched and almost virgin like, it's a whole different ball game here. HERE ARE 5 THINGS TO DO in LIO, EL NIDO in PALAWAN.
The first question would have to be how to get there. LIO, El Nido is located in the northern part of Palawan. It could be reached via AIR SWIFT that flies out of NAIA terminal 4 and lands in LIO AIRPORT. From here it's only a few minutes to LIO TOURISM ESTATE where you could check out CASA KALAW (One of heck of a stay which you can read about out here). Other than that, you could fly to the newly renovated and improved PUERTO PRINCESA AIRPORT. This route is a bit tiresome though as you would have to take a land trip that could last more than 4 hours.
1) GO ISLAND HOPPING. El Nido is known for different islands that have their own unique characteristics to entice you to come on over.
Here, you could lounge at the beach or even do a bit of snorkeling. Pawikans or Philippine Sea Turtles could be seen around the different islands as well.
If you only have a few days in PALAWAN, SKIPPER CHARTERS would one of the best ways to check out the different islands. Since they operate a speed boat, they are able to bring you to more locations faster and easier compared to other pump boats. Furthermore, they have an excellent guide that would come with you and assist with everything. Service is their bottom line.
2) DO A MINI FOOD CRAWL.  SHOPS at LIO is the beachfront area that has different stores and businesses to cater to your needs. It's here that you could check out a number of bars, cafe, and restaurants. From fresh seafood to amazing cocktail drinks, you won't go wrong visiting this place. 3) DO BEACH ACTIVITIES. LIO in EL NIDO is blessed with a 4 km stretch of beach front. Here, you could do a number of beach activities that would make your stay worthwhile.
One could rent kayaks and even go paddle boarding. You could even explore the place by going on a bamboo bike. For group of friends, they also offer beach volleyball right there by the shore.
4) KEEP IN TOUCH WITH NATURE. LIO TOURISM ESTATE goes for a very responsible approach when it comes to mother earth. They try to keep everything in line with social responsibility. From here, you could roam around and see the greenery by riding a kayak around a majestic lake. Also, you could do a farm tour that showcases how they are able to produce fresh, organic, and delicious vegetables and fruits.
5) WATCH THE SUNSET. Your first day in LIO, EL NIDO would not be complete without watching the sun set. Just stroll by the beach and look at that amazing view. It's like God planned everything perfectly and it makes you appreciate His work more.

AIR ASIA SANTAN FOOD FESTIVAL: INFLIGHT MEALS TO CRAVE FOR

 
With traveling becoming more and more accessible and affordable, AIR ASIA wants you to get comfortable with all the amenities that you would need and want without breaking the bank. Hence, they hosted the first ever SANTAN FOOD FESTIVAL. An event to showcase the different inflight dishes that they serve, it is here that you get to see and experience the taste and flavors of SANTAN.
 When one thinks of MALAYSIA, the first place that comes into mind would be the PETRONAS TOWERS. Standing tall, this twin skyscrapers are home to different offices and businesses. Other than this, MALAYSIA is also known for being the base of AIR ASIA. ENTER THE RED Q.
 RED Q is the headquarters of the AIR ASIA GROUP. An impressive office, here we could see an open environment for everyone to interact and get their creative juices on.
 As you enter, you are greeted by the feeling of relaxation while in a work mode atmosphere. Bean bags and other comfortable seating arrangement are right smack in the middle.
 Holding the SANTAN FOOD FESTIVAL event here gave influencers and the media a glimpse into the different dishes AIR ASIA wants to share. Being the first ever, this is the largest inflight food tasting event in ASIA. Featuring meals from across the region, AIR ASIA wants its guests to enjoy and have a peek into the culture and different flavors one has to offer. It's like you're already traveling and experiencing food even while on the plane.
 According to AIRASIA GROUP CEO TAN SRI TONY FERNANDES, food is a unifying factor across the region. It's one of the reasons why we travel. Thus, they created this endeavor. SANTAN which means coconut, is the unifying term used to describe the different flavours of the ASEAN that AIR ASIA wants to deliver.
 From the latest signature dish of THAI GREEN CURRY, one could also go for the NASI LEMAK. It's like a mixture of spices and heritage rolled into the dishes. The Curry is a semi-spicy dish that is partnered with fluffy fragrant white rice. On the other hand, the Nasi Lemak is your meal on steroids. It has different parts that makes everything work. From the crispy fried anchovies to the salted peanuts and the chicken, scattered over rice cooked with coconut.
 Aside from these, they also had CHICKEN WITH MISO, CHICKEN ADOBO, PAD THAI, and even a mix of Indian food to add to the growing choices. Favorites though would have to be the ADOBO and the PAD THAI. Innovating more, AIR ASIA plans to use green packaging and even install an electronic system to make ordering and payment easier for the guests.

MIDAS HOTEL AND CASINO: A STAYCATION WORTH EXPERIENCING

With the age old saying don't judge a book by its cover, the MIDAS HOTEL AND CASINO is just that. One might think that this hotel can't stand alone with the big boys but I would have to disagree. As you enter the lobby, you get a sense of grandiose. Different boxes of luxury bags were used as decorations all around the hotel.
Rooms are quite pleasant. Very spacious and up to date, you get to entertain yourself with the cable tv and the fast wireless internet connection. Special mention has to go with its balcony. One could step out and watch Roxas Boulevard and see how the sunsets.
The washroom has a separate sink and shower area. Toiletries are high end and would definitely make you want to indulge. If you need more, don't worry they also do turn down service and replenish your shampoo and soap.
Staying at an executive room will grant you access to the SUNSET LOUNGE. Here, afternoon tea is served from 3pm to 6pm. Later on, an acoustic guitarist would serenade visitors and guests. One could start with different cocktails and appetizers to prepare you for the night ahead.
For dinner, MIDAS CAFE would be your best bet. This is the all day buffet restaurant of MIDAS. Different types of meat are carved and served to your liking.
Aside from cooked dishes like lamb, fish, and other poultry courses, one could also go for their grilled items. You could request the chef to grill different meat to satisfy your taste buds. It's not pretentious but everything tastes good.
After dinner, MIDAS' SPA would be very inviting. ESSENSES SPA is open from lunch time all the way to the wee hours of the night. Their signature massages are very relaxing and enjoyable. Affordable compared to other hotel massages, this one has the right strokes to make you relax and fall asleep.
After an amazing sleep, breakfast would be the least of your worries. Just pick up the phone and advise them of your preferred meal and time for it to be served. Sausages alongside garlic rice seemed to be the perfect choice.

Even if MIDAS HOTEL AND CASINO doesn't have a pool (in the works), their spa and gym definitely makes up for it. The service and the dedication the staff has to help their guests would be among their strong suits. If you're planning to stay, I would suggest you take note of their loyalty membership that gives you access to not just one room but two. Aside from the different discounts, they also offer a lot more perks just for you.

TSUJIRI in S MAISON: DEFINITELY FOR MATCHA LOVERS

 MATCHA or green tea has never been this popular. It seems that this fare has gone global. Traditionally, matcha is best partnered with different snacks. Who knew that restaurants and outlets would open up with the sole role of serving MATCHA?
 ENTER TSUJIRI. With more than 155 years in existence, this brand has helped propel matcha to its well-liked status. Aside from serving them as a drink form, TSUJIRI is well known to make them into sundae versions. Mixed with red bean and even glutinous rice balls, one can't help but feel relaxed after having one.
 TSUJIRI opened its first store in the Philippines just recently. One of the highlights would be that they import almost everything from Japan. Slowly, they are rolling out different variants of how matcha could be served. From cakes, to cream puffs, and even shaved ice, they keep on bringing in the good stuff. With the grand launch slated on May 28, one can definitely expect a lot more from TSUJIRI. Currently, they plan to expand to different malls in the metro so northerners need not worry too much.
Opened to the public just a few weeks ago, TSUJIRI in S MAISON has brought its A game. Matcha lovers would definitely flock to this store to enjoy it's delicious offerings.
