CANADIAN BEEF in MAKATI SHANGRI-LA'S SAGE

CANADIAN BEEF has been a staple in restaurants here in the metro. If you're not familiar, Canadian Beef is a flexible and great source of flavors. Recently, Makati Shangri-la and the CANADIAN BEEF partnered together to create and serve delicious dishes at SAGE in Makati.
A small gathering of sorts was held in Sage Bespoke Grill in Makati Shangri-la a few days ago. Guests were treated to a multi-course selection of fine dishes made with Canadian Beef. The meal was themed after the different seasons in Canada. First stop was SPRING. Here, Le Bouilli de Grand Maman was served. This is Canadian Beef Consomme. There was subtle truffle flavor mixed with the consomme. It was light and perfect to start the dinner. Wine pairing was even done to elevate the flavors. Not a surprise, Canadian wines were used.
For Summer, Reef and Range on Three Summer Sisters was the name of the dish. It composed of a cofit of Canadian Spot Prawn and Beef Cheeks Tortellini. The prawns were sweet and magnificent. The tortellini brought out the beef flavor in a different way. It actually worked with the squash, cheese, and corn that came with it.
The next dish was for FALL. BEEF CHUCKS 2 WAYS. A very simple and straight forward approach to trying out what CANADIAN BEEF HAS TO OFFER.
First bite into the Braised beef gave me a great feeling. The flavoring was spot on. According to Chef Sebastian of Sage, the process was a long but worth it. Stock was used to reinforce everything. The grilled Canadian Beef Chuck had the perfect texture. It wasn't rubbery nor was it painful to eat. It was divine. Partnered with some mustard, this dish was by far the favorite of the night.
To further showcase the qualities of CANADIAN BEEF, they served WOOD GRILLED PRIME RIBEYE. Partnered with charred cabbage, honey glazed turnips and mustard jus, this piece of meat was simple and direct.
Winter was their dessert. This is their pumpkin spice with sticky toffee pudding. On the side, there was dark beer sorbet with dried fruits and nuts. Once they presented this to the table, you could smell how freshly baked it was. It reminds you of pine trees and the holiday season.
CANADIAN BEEF has again showed its character as a go to ingredient when it comes to the kitchen and grill. You could catch CANADA'S FOUR SEASON in SAGE BESPOKE GRILL up until March 28.

CHRISTMAS PARTY AT BROTZEIT SHANGRI-LA MALL

If there was one place that I would like to have some beer loving, it would be BROTZEIT. Known as the place to visit for your European Soccer needs, this German bar has a ton of drinks available. Just this weekend, my friends and I in the Kain Tulog Gang had an intimate gathering. A Christmas Party of sorts with all the old fellas over. Been friends with most of them roughly 7 years makes this a must go to event.
BROTZEIT SHANGRI-LA is located in the alfresco area of Shangri-la mall in Mandaluyong. Parking could be a problem but valet is always available. I did arrive late because of the Christmas Rush but the spread was just amazing. I started with the GRAZING BOARD. Ham, different types of cheese, jam and even pretzel ensaymada. This is a must for snacking and drinking.
Salad wise, I was impressed and surprised. I didn't know that Brotzeit offers these healthy treats. One could be a seafood version with seared tuna, shrimps, and smoked salmon. The other is more a more party take on salad. The FESTIVE WINTER SALAD has a mix of lettuse, beetroot, brussel sprouts and caramelized carrots. Cranberries and nuts were added to the fray as well.
The spread was filled with different types of SCHNITZEL. Along with a number of side dishes like mashed potato and sauerkraut, I was pretty happy.
Something for the season, one of them was covered with tomato sauce and cheese. For me though, the BREAKFAST SCHNITZEL was the star. Topped with deep fried egg, bacon and other goodies are sandwiched in between two schnitzel.
Of course a visit to BROTZEIT will never be complete without the PORK KNUCKLE. Somewhat similar to our Crispy Pata, their version employs more meat and skin. The outer layer is crunchy and the inner moist!
Before I forget, I did enjoy the PRETZEL ENSAYMADA. These cuties weren't as sweet as the traditional version but were just perfect to partner with everything.
One should not leave BROTZEIT without the trying the drinks. Aside from the different high-end draft beer they offer, they also have a number of perfect for the holiday treats. One could go for WINTERBIER which is a specialty that is brewed for the cold winter months. Another would be the MULLED WINE which is a GERMAN Christmas Tradition. It's wines filled with aromas of cinnamon and orange. If you're not into alcoholic drinks, you should try their spiced Christmas Hot Chocolate.

TERRIFIC LUNCH AT SAMBA in SHANGRILA FORT BONIFACIO GLOBAL CITY

When one talks about Peruvian dishes one restaurant comes into mind. SAMBA. The Shangri-La Fort has this pool side restaurant as the one to visit when thinking about ceviche and other delicious seafood dishes
Samba has been there for quite some time. It caters mainly to the dining crowd as it has an outdoor seating area with a nice view. For diners that is allergic to the heat, they could head on over to their indoor area and relax.
Most if not all of their dishes are from the sea but they are definitely fresh and spot on. One could start out their soft shell crab dish. Deep fried, this thing of beauty could make your mouth watery after a bite. Everything is crispy and you could eat it. Unlike traditional crabs, everything here will definitely end up in your tummy.
When visiting SAMBA, you should know that their best sellers would be the CEVICHES. Here, we have three of their best version. Each giving distinct flavors. Take note though, one is a bit spicy and hot. The other is a mix of seafood and the other is made with grouper.
For something a bit healthy, you could go for some quinoa. This one is topped with shrimps and some cheese to give it a creamier texture.
When one visits SAMBA at Shangri-La FORT, one should always go for the anticucho de pulpo. Basically grilled octopus, the meat isn't rubbery nor mushy. It had the perfect mouth feel.

Somewhat similar to Paella, the Arroz Con Mariscos is the Peruvian Seafood Rice. Different flavors create a heavy yet mouthful of a treat. A bit thick but smooth, this one is one for the books.
Visiting SAMBA for lunch is a nice way to relax after a hectic morning. From Monday to Fridays they offer a wide variety of time and pocket friendly dining options.

SAMBA AT SHANGRI-LA FORT BGC: TIKI TIME!!!

Well Hello there! This has got to be one heck of a time to be craving for some alcoholic drinks. Not just any liquor but premium made by no less than the TIKI MAESTRO.
Summer seems to be coming up as the vibe right now is either on the beach or on near a pool and sipping some drinks. At SHANGRI-LA FORT, BGC, their in house restaurant, SAMBA invited over a master when it comes to TIKI drinks. Meet DANIELE DALLA POLA. Known as the "Tiki Maestro", this lively drink creator knows no limits when it comes to alcohol concoctions.

Caught red handed, he was quick with his mixtures and was even playing around. Right from the start, he made some daiquiris just to let everyone settle down. Shots of Bacardi 8 years were also distributed left and right just so as to let the party start.
Food was of course by Shangri-la Fort's SAMBA. Peruvian cuisine is the name of the game when it comes to something refreshing and light.

A number of dishes were brought out. From pulpo or octopus to other seafood dishes.
A favorite dish of the crowd would have to be the soft shell crabs. Deep fried and perfect with the mango salsa, each dip makes everything okay. You find yourself going for more.
While everyone was busy with the food, the Maestro went about on demonstrating and showing how to make different cocktails with rhum.
Some of the classics were given twists while others were given a dash of creativity as well. Surprisingly, the flavors are quite similar but there was a sense of elevation when it came to the flavors and the spirits used.
Playing with fire, this stunt caught the attention of almost everyone in the area. It's a nice treat to be treated to some entertainment especially when its paired with a nice cold drink.
Shangri-la The Fort Bonifacio Global City is known to invite guests chefs and mixologists to perform and have its guests experience something different. Cheers to more delicious events in the future.

BREAKFAST BUFFET at SHANGRI-LA FORT: HIGH STREET CAFE in BGC

 Breakfast has always been the most important part of any day. This is the time when you get yourself together and plan what's next. It spells out if you're going to have a good one or a lousy day ahead.
 At HIGH STREET CAFE in SHANGRI-LA FORT BGC, they take breakfast seriously. Aside from the different stations that you could visit and check out, they have a number of dishes that you could request.
 Right from the get go, they get you going with some shooters. These healthy juice shots are a jolt of surprise. Not only do they think about your health, they also make them delicious.
 You might also want to have some chia seeds with mangoes and oats. Pretty darn good treat to start everything.


 Filipinos are known for having pandesal or bread early morning. Here at HIGH STREET CAFE, they make them a notch higher. These cream cheese pandesal with baked egg and bacon has an amazing runny egg right in the center. Talk about egg porn.
 If last night was a party night, these PORK CONGEE would do wonders for your hangover. Served with century egg and an assortment of toppings, it's a sure fire way of letting your tummy rest and have fun.
 For some, the noodles station would be the most ideal to start breakfast. It's here that you get to make your own dish. By mixing and adding what ever ingredients you may like, the chef at the station could make things happen.
 For some Malaysian Flavors, the PONTIAN noodle dish might be your best bet. You can classify this as a "dry noodle bowl" but the flavors are really packed in there.
 Rice lovers would be extremely happy with the BEEF PARES. Tender, juicy, and aromatic, this dish is a must get whenever you're having breakfast at HIGH STREET CAFE. The smell reminds you of early mornings at home. I am happy to say that the next time I visit Shangri-la The Fort, this would be a dish I would definitely go for.

 Aside from these dishes, the buffet spread for breakfast at Shangri-la's High Street Cafe has a lot to offer. They have a cheese station, healthy dishes, noodles, cooked dishes, and of course BACON.
 For dessert, you might want to try out their version of the NUTELLA and BANANA PIZZA. The crust isn't as pizza as you might think but it does serves it purpose.

HIGH STREET CAFE is the all day buffet dining outlet of Shangri-la The Fort in Bonifacio Global City. It's located on level 2 just beside the check-in counter in the lobby.
